Prospectus: Teach fabrication of fish and shellfish

11:00 AM Advanced fruit & vegetable carving  "Teacher: Chef Ray Duey, CEC"

Prospectus: Seminar and exhibition of advanced techniques of  fruit/vegetable Carving   

Method: "Display of proper tools, safe use of carving techniques, photos of

advanced carved fruit & vegetable displays.     

Student capacity: 75  1 hour class 


12:00 PM Sugar Sculpting   Teacher: William Gerber

Prospectus: Teaching basic sugar skills with isomalt sugar.   

Method: "Lecture, demonstration and step by step completion of a sugar floral piece"

*A microbrewery showroom that exhibits some of the finest Microbreweries in the nation. San Diego currently holds third place in the nation and seventh in the world as far as the quality of Microbrewery beer. San Diego is fast becoming the Microbrewery Capital in the United States.


*ACF approved Culinary Seminars. Professional and Student Chefs can earn continued educational points for Chef Certification by the American Culinary Federation. These one to two hour seminars are open to the public and are a great benefit for Restaurant and Hotel Food and Beverage personnel.


*Entertainment is presented by several Children dance troupes, Nancy Osborne and the 63eatles
